In 2022, our organically cultivated vines thrived without the need for irrigation, showcasing the resilience of our 25-year-old vines. Two weeks ahead of the full harvest, we carefully picked the grapes by hand, selecting only the finest. One tonne of this precious fruit underwent a careful drying process. Once the initial fermentation commenced, the dried fruit joined the fermenter, enriching the process and imparting a delightful infusion of delicate, velvety tannins. Our commitment to excellence extends to our choice of oak, blending both new and seasoned French barrels to enhance the complexity and depth of the final product.
